The biome you're in affects your body temperature, either raising or lowering it depending on whether you're in a hot or cold environment. Extreme biomes, such as the Nether, Frozen Peaks, and Deserts have a more significant impact and can quickly push your temperature to dangerous levels.

As your body temperature approaches either end, temperature related adverse effects will begin to stack depending on the percentage of how hot or cold your are.

Replenishing your Thirst can also bring down your temperature if you are already hot.
